Ingredients
- 4oz butter or margarine
- 6oz sugar
- 8oz self raising flour
- 2 eggs, beaten
- 2 large or 3 medium, very ripe bananas
Recipe
- Preheat oven to 180c and grease a 2lb loaf tin.
- Cream the butter and sugar in one bowl, and mix in the beaten egg.
- Mash the banana with a fork in another bowl.
- Add the two mixes together, then add the flour.
- Pour into the loaf tin and bake at 180c for 40 minutes.
- Turn the oven down to 150c and bake for a further 25 minutes.
- Turn out on to a rack and let cool.
