Not pancakes as in crepes but American style pancakes as in drop scones.

Ingredients
4 Eggs
3 Tbsp Oil
1/4 cup Milk
1/4 cup Organic Coconut Flour
1 Tbsp Sugar
1/4 tsp Sea Salt
1/4 tsp Baking Powder

Instructions

Preheat a non stick pan to medium heat.
In a large bowl whisk together eggs, oil and milk until well combined.
In a separate bowl sift coconut flour, sugar, salt and baking powder.
Add dry to wet and thoroughly mix until there are no lumps.
Ladle 2 Tbsp batter per pancake onto lightly oiled pan. Cook until bubbles begin to form on the top, about 4 minutes, then flip and cook on the second side.

I chopped up some strawberries and added it to the batter - yummy.

that reads as yummy ,i just need to find coconut flour .

ah ha it seems to be available via the usual suspects of retail food trade but i had not heard of it

I was surprised at how moist and tasty they are. I think they would be delightful with many variants of chopped fruit included. Strawberries were good. I also think app!e or pear or raspberries or blueberries and in fact dried fruit would be yummmm.

Yah. Hate to say it but Amazon was my friend.... Through a market place seller.. So slightly redeemed.

I can't remember but I know it was more than Mr Shan and I could eat.

Tried them this evening, added blueberries to the mix. They are indeed yummy, and they got a big thumbs up from my lovely Jaki.

These were really good! I found the coconut flour in our local Holland and Barrett which surprised me!
