(Just posted this on the RC forum.)
When is the best time to pick leaves ? At the moment they are small and pale, is it better when they are bigger ?
Anyone made/making any ?

Depends what kind of wine you want

Make them in spring and you get a tasty, slightly tanniny wine, whereas if you make it later (normally in autumn, but before the leaves start to turn brown) it's got a sharper, richer, and more tanniny flavour. I prefer spring, but I'll confess to not making this wine most years, it's not a favourite.

I had some lovely oakleaf and elderflower wine a while ago, I must have a go at making it- the combination was wonderful, it toned down the elderflowers beautifully and had a real 'quality white' flavour to it. Any ideas of how to achieve this one would be good, wasnt sure if they'd made two wines and blended them or used both ingredients in the same brew

Oooh, now that idea I like a lot. A lot a lot.

Google gives us this to mull over: Oak and Elderflower Wine

Haven't seen a recipe.

Terry Garey in her excellent book "The Joy of Winemaking" reccomends blending wines to experiment, and if they work making them as a combination from scratch.

I'm tempted to try this; ue a half quantity each of oak leaves and elderflowers. I rather fancy this as a medium wine, not too dry.

Think I have to try this.
