Ingredients


  • Just over ¾ pot “Very Lazy” minced red chillies

  • A head of garlic

  • 1 ½ pints spirit vinegar

  • ½ pint water

  • 2 heaped teaspoons cornflour

  • Up to 3 birds eye chillies

  • 1 teaspoon salt

  • 1 teaspoon pepper

  • 1 tablespoon vegetable oil



Recipe


  1. boil all together for 35 minutes, or until sauce has thickened.

  2. Let it cool slightly, then bottle

  3. shake the bottles occasionally during cooling to stop all chillies rising to the top and forming a bung.



Comments

The birds eye chillies are to “fine tune” the heat to your requirements – I’ve tried the recipe with no added birds eyes and it was on the mild side, and with three birds eyes it was quite hot (for sweet chilli sauce). This time, I’ve tried two, and the heat is (to my taste) just right.
