Ok, sit rep on the half piggy.

The leg was just huge, I've made a roast, a gammon joint and a great big ham for christmas from it, the two hams are currently in a brine tube.

Loin and bellies have been salted for bacon and are in the fridge, I've made the first (2) suasages which were amazing, but need more rusk. Going to get the various sausages made tonight if the red wine holds out.

Tomorrow is brawn, pate and stock day.

salami, salami, forgot about that!! Ok now I'm stressed.

Damn, no. The 40 litre bin is full with the hams. The head etc will need a good twelve hours so i guess it's another purchase tomorrow and brawn making on sunday, or I could freeze it.

Need loads of salt with the volume required to cover it.

Freeze it, I have 4 in the freezer at the mo, waiting till I have some spare time.

well worth the effort mate
next one will be easier
the sleep of the toiler is always just ,especially if the toiler is full of nice piggy product .
im not sure bout wet cure but home done dry cure is splendid
cant beat real sausages and the satisfaction of knowing what dinner is , great

Am reading this with serious trepidation:OH has agreed not to keep the gloucester two as breeding pigs but to send them to slaughter.
Now realising that we need 4 more freezers and a lot of wine


On the downside he keeps eyeing up Aberdeens and Dexters - Bodgers fault!
