£10 a kilo.

What are the best cheap cuts for casseroles?

I never pay for mine, but I think that might be a tad expensive. What do the others think ?

Last year a few people posted up prices and about £10 a kilo for prepared venison seemed about the average in the South East.

If buying venison, I usually get shoulder for [pot]roasts - just as lean etc as leg. Shoulder will also do nicely for casseroles.

Not had any for a while, seems to have become quite dear (groan) these days.

No way...........game dealers are paying for carcases @ £2/ kilo.

Ask a local shoot if you can buy a whole beast and at 35-40 lb dressed out not skinned with the offal = a result.

Hasn't it got to be sold via a game dealer though? I tried to buy a whole carcase from our local dealer but they didn't seem interested in selling to the public.

agree it's not a bad price if you have no alternative,
£10/kg for prepared for stewing and up to £15/kg for steaks from our local farm shop/game dealer.

We buy whole carcasses too, nowhere near the price you've been quoted, I'd ask around perhaps, for us venison is a cheap meat (but we do buy it skin on, just headless and gutted and we do the rest)

Haven't the space for a half - let alone whole casrcass, so that's not an option. This deer comes from a forest ranger just outside the M25 via someone in my college class.

Round here there's no way of getting anything other than venison burgers or sossies - I'd have to go into the posh parts of London and pay their prices to get any other cuts, so I think it's fair do. I know who and where the money is going so I have no worries.

I'm getting a rolled belly to pot roast in this instance. I'd love to have a go at saddle, but our oven's too small. There's likely to be one a month through the season, so I may have a chance to experiment futher.

What size oven do you have ? as a Roe saddle isn`t as big as you`d imagine.

I don`t have one at the moment but I`d estimate smaller than 12" x 8" for a big buck
