sorry to come to this thread so late, I haven't been reading the trading section much lately
Just wanted to say that Nick's pigs are very tasty, made fantastic bacon and an air dried ham. The butcher did what we asked and we got the cuts we wanted. The pig was around 100kg live weight and produced a lot of pork, we still have a joint left in the freezer just over a year later. We also took the pigs head, and another one or two from the others that weren't wanted, and made some brawn, and we were given the bones to make stock. The flavour is much better than the supermarket bought pork, even the organic pork doesn't have the same flavour as what nick managed to produce. If it wasn't that a friend much closer to home is raising a pig for us this year then I'd definitely be asking nick for another pig this year.
