I said a while ago that I had a recipe for rhubarb cake and have found it at last - but now I can't find the original thread. Anyway here it is:

400g rhubarb cut into 2cm chunks
200g caster sugar
150g butter - softened
2 eggs - lightly beaten
75g SR flour
1/2 tsp baking powder
100g ground almonds
Grated zest of an orange + 2 tbsp juice
25g flaked almonds

Grease a 23cm springform cake tin and line with baking parchment.
Place the chopped rhubarb in a bowl and cover with 50g sugar - leave for 30mins (alternatively used tinned rhubarb)
Meanwhile use an electric whisk to beat together the remaining sugar and butter, then whisk in the eggs
Use a metal spoon and gently fold in the flour, baking powder and ground almonds.
Stir in the zest and juice
Stir the rhubarb and sugary juice into the cake mixture and spoon into the cake tin.
Sprinkle over the flaked almonds
Bake at 190c/ Gas 5 for 25 mins then reduce the temperature to 180c/ Gas 4 and cook for a furthe 20-25mins or until firm.
Cool in the tin for 10 mins before turning out to cool.
Serve warm or cold with whipped cream or custard

Serves 8 - 413cals/27.3g fat/11.5g sat fat/0.5g salt/29.3g sugar per serving

I'm wondering if it would work with strawberries?

Rhubarb is SO expensive in the shops I simply won't buy it! I must get some going in the garden...

I've been making an upside-down rhubarb cake all spring. Just cut up rhubarb and put in bottom of cake tin with sugar - as it's got older I've sometimes heated it briefly with the sugar.

Then put basic sponge cake mixture (i.e. same quantity of eggs, butter, sugar, flour) on top.

Turn upside down when cooked.

Has been very successful.

That recipe sounds good Green Rosie. I have rhubarb in the garden and ground and flaked almonds left over from when I made my Christmas cake so there's nothing to stop me making it. The thought of it is making my mouth water. It should last well (if allowed to) with the ground almonds in. I'll probably leave the orange out as they don't agree with me.

Also - not sure about strawberries, but I have been doing same sort of thing - i.e. basic sponge - and adding frozen blackcurrants or redcurrants (trying to finish last year's before this year's are ripe!).

Both very good - did blackcurrant cup cakes (a Sarah Raven recipe) with pink icing on top.

Made this tonight with donated fruit fresh from the landlords garden.
Very moist and served it warm with a little extra lightly stewed Rhubarb in orange juice and a generous dollop of Greek Yoghurt.

I was scanning through Latest Posts and saw Rhubarb Cake - "mmmm, that sounds good" I thought. Oh, it's my own lost recipe!!

Sounds lovely. I think it would work with strawberries. I will give it a go when our strawberries are producing. I would do it with rhubarb except I can't seem to grow it for love nor money!

Wish we could, it's silly money in the shops, fortunately our landlord has a good crop. Cake was scrummy BTW Rosie.
