Makes an interesting wine. Needs to be well matured, but is tasty.

My favourite use at the moment is lemon balm and ginger tea. Crush a few leaves of lemon balm, add some finely sliced ginger, pour on some hot water. I can't stand any "packet" herbal teas but this is really good.

That sounds nice. I often have just plain lemon balm tea with a smidge of honey, but the ginger sounds like a very nice addition.
