By all means, prune the snot out of your rose, but maybe be moderate on your quince pruning. If you can prune a bit off every year, it'll help to equalize the fruiting loads. Many trees/shrubs when left to their own devices will get into an on/off two year cycle and fruit heavily every other year.

An easy way to think of it regards the plants allotment of its sugars. If its sending all of its energy to its fruit this year, it won't send much to flower bud development for next year. Which is beneficial to the plant, as two years of heavy cropping can be taxing upon it.

Pruning will help moderate the cropping years, no extreme highs and no extreme lows.
