I'm in a soup-making mood at the moment. Well, not right now. But in general. I think it's the excuse of using the blender.

Anyway, I am seeking inspiration.

Simple, nothing fancy, must involve (some) use of blender.

Know anyone with a courgette glut that they need help reducing?

Chop an onion and sweat it in a little olive oil. Add chopped courgette and continue to cook until softened a bit. Stir in a teaspoon of curry powder. Pour over stock. Simmer until very soft. Whiz in the blender. Add a bit of cream or milk if that is your thing (I generally don't bother).

And if you don't like curry flavouring you could put a bit of blue cheese in instead.

Well, what soups do you like?
How about roast tomato soup? Or spicy sweet potato and coconut?

Pretty much the same as the courgette one except you use chunks of sweet potato instead of courgette, a bit of thai red curry paste instead of curry powder and add some coconut milk at the end. Very easy.

the strangest soup I tried making recently was spinach and coconut, being as i dont like spinach or coconut that much it was fantastic.
sweat down an onion without colour, add spinach and wilt, add chicken stock and simmer until tender, add a chunk of coconut cream and blend, season with plenty of black pepper and eat.

Cheap soup :

Carrot and celery.
Sweat a roughly chopped onion and garlic. Add 1lb chopped carrots and half a head of celery and continue sweating till starting to soften. Add a bit of water and simmer for a bit.

Liquidise with some cold water. Put back in pan and reheat.
Consistency should be gloppy, not thin liquid.

Use the same method as Bebo's courgette soup but using diced butternut squash and ginger. 'Tis lovely to come home to after a long walk

We must have been reading the same recipe book, I've made this thinking it sounded peculiar, and it turned out to be really delicious.
