Hoping some kind folk on here can give me some recipe ideas. Some family friends with a small holding this year got a batch of turkeys to grow on and sell in time for christmas. With the slaughter day coming this week I offered to help out as neither of the couple have had any experience in slaughtering or drawing birds. In return I've asked for all the necks, hearts, liver, kidneys, and gizzards.

I now realise that I know very little actual recipes apart from single item stand alone dishes such as fried liver etc. Does anyone have any ideas I can use for what will be a glut of offal to keep me well on into march.

the necks can be cooked up together and then the meat picked off. not a lot on this, but you can make soup

livers you can treat like chicken livers - so a chicken liver pate recipe.

kidneys? never found them

gizzards.. obviously you have to cut in half remove the grit and peel the skins off them

every year i carefully save the gizzards from our chickens in the freezer with a view to making confit de gizzard (spelling?) - ie slow cooking them in lard, as i had gizzards in a salad in France once and they were delicious. ifyou dont slow cook them they are still edible but kinda crunchy. So far i have not been successful - the first year i salted them and did not rinse before cooking ad they were wayyyy too salty (but tender), the second year i forgot about them in the rayburn and they were burnt to a crisp this year will be the year....

If you are selling them then to be quite frank the neck and the giblets should be sold with the bird.

If I'd bought a fresh turkey from a smallholding I wouldn't be very pleased to discover I'd been sold one that came like a Bernard Mathews gibletless job.

If there are more than 10 turkeys then I give a whole bird to my helper. If not then I pay £5-£10/hr depending on adult/child and how quick they are!
The giblets should be sold with the turkey

They are certainly a brave lot to raise and try to butcher turkeys with zero butchering experience.

I'm like the rest, when I get a turkey with only 1/2 a gizzard or less giblets, I'm NOT HAPPY!

I suppose if the birds are clearly marked, "no giblets", it will be no problem.
