Today Im making loads of chilli toffee and I want
to make a chilli toffee pouring sauce, for ice cream etc, should I simply add more water to the toffee recipe so it doesn't set ?

i think for runny toffee sauce more liquid is worth a test batch in a small pan

iirc the hardness of toffee is determined by how hot for how long.the hotter and longer the more brittle the result so a shortish coolish cooking might help

or make toffee as usual ,smash with a hammer and dissolve in warm liquid it to form a sauce .this also works with fudge
