Quiche or spanish omelette, but also like egg curry DD's last BF was half Sri Lankan, and we captured the family recipe

a really decent egg mayonnaise is always good. On fresh homemade bread its hard to beat as a sarnie. Hardboiled eggs in a well spiced dal is a favourite for times when the cupboard is getting bare. Eggs coddled in honey, butter and chilli is suprisingly good, if a bit unusual

elderflower fritters are always good

eggs benedict a good way to use up a glut

I'm rather fond of a soufflé omelette. Mushroom and blue cheese was a particularly good one.

did a souffle for the kids a few days ago. not exactly much work with a mixer. fusspot little'un loved it.

egg drop soup


eggs benedict, eggs florentine or just poached eggs. i like poached eggs


hundred year old eggs- taste better than they look.

elderflower fritters

heads of elderflower (picked on a sunny day), leaving a long stalk

1 egg

4 oz flour

1/4 pint of milk

oil for frying

golden syrup

Pick the elderflowers just before cooking, they don't sit around well. Beat the egg, flour and milk together. This makes a fairly thick batter, add more milk if you like it thinner. Heat the oil, about 2 inches deep, in a pan. Holding the flower head by its stalk, dip into the batter.. you might need to poke it in with a folk. Then lower gently into the hot oil. cook for a minute or so, then lift out by the stalk and repeat. The batter should be enough to do about 4 - depending on how big they are.

serve with golden syrup

Eggs coddled in honey and chilli:
Into each egg coddler/ramekin/teacup put a knob of butter, a small teaspoon of honey and a pinch of chilli powder or chilli flakes to taste. Add one or two eggs. Cover and coddle in simmering water until cooked to your preference.

Eggs are also nice coddled over cream cheese and finely chopped ham, in which case aim to keep the yolk a little runny so that it all can be stirred together into a delicious mess before eating with toast.

Blue cheese and mushroom soufflé omelette:

Turn on the grill.
Separate your eggs into two bowls. (Two or three eggs per person, depending on how big your pan is and how greedy the people are)
Season the yolks and add any herbs you wish to use.
Melt a little butter in a frying pan and cook some sliced mushrooms.
Beat the egg whites until they stand up in peaks, then fold into the yolks. Don't over-mix - you want it very fluffy.
Tip the egg mixture onto the mushrooms, spread it out with a spatula and cook (on a fairly hot heat) until the bottom has set and starts coming away from the side of the pan. It should puff up a bit.
Sprinkle the blue cheese on top, then put the pan under the grill until the omelette has puffed up and set, and the cheese has melted.
Serve immediately.

oh elderflowers are nearly out will try this as I dont eat gluten I wonder if rice flour will work

its just a thick pancake batter really - if you can make ok pancakes with rice flour then it should work fine.
