I have been keen to try making jerky for ages now, but have never had enough money to buy some lean beef for it. Recently I saw the mention of beef heart jerky and thought I'd give it a try since heart is much more affordable.

So today I went to the butcher and bought a massive cow heart, 2 kg worth. I didn't realise quite how large they are! It was also only £7 for that much meat, which is a quarter of the price of a lean cut of beef. So today has been spent butchering the heart, and it is now marinating in a mixture of tamari sauce, lee & Perrins, tabasco, garlic and paprika in the fridge. After 24 hours of marinating I'll dehydrate it.

While cutting up the meat, I fried a small piece to see what it's like, since I've never had heart before. It was really good, quite like really lean venison steak. So in conclusion, everyone should buy beef hearts, they're great!

We had poor people's jerky, made by dpack from a roadkill deer.

Sounds good to me, but a bit expensive for the heart, might try it next week.

Rob; your meat is cheaper than I thought! But for a meat box we'll still have to wait until Barry gets the very long awaited payrise. Venison jerky sounds lovely.

When I was still driving semi-truck hauling meat, I delivered a 53' refrigerated unit full of beef heart to a customer.

The customer happened to be a very large U.S. maker of jerky.
