I swapped some eggs for some trout pate from the Trout Lady at the market this morning and I am in awe. I've never had it before and it's absolutely fantastic. In practice, I'm too lazy to make my own; but in principle, does anyone have a recipe?

Smoked trout. Cream cheese. Maybe a bit of cream. Pepper. Bit of lemon juice and/or tabasco if you like.

I can do that. It's a 'chuck it in until it looks right' recipe, right?

Works well with smoked mackerel if you aren't feeling quite so extravagant.

As mine goes in the blender I use the cheap trimmings packs you can get, cheap and tasty.

Smoked trout or mackerel, some creme fraiche, lemon juice, chives, spring onion, fresh chopped dill, pinch of sweet paprika and black pepper.
