My ideal breakfast is fermented porridge. This sounds strange and complicated but it's lovely and dead simple.
Ideally, porridge should be soaked overnight to get rid of the anti-nutrients which are normally neutralized in the sprouting process. Soaking will neutralize the tannins, complex proteins, enzyme inhibitors and phytic acid which preserve the grains. All this makes the porridge more digestible.
So what do you do?
Soak the grains overnight in warm water and one tablespoon of something acidic like whey, yoghurt, lemon juice or vinegar. The next morning, it cooks in about a minute. Eat it with butter or cream, or coconut and chopped nuts. The nutrients in the fats are needed to absorb the nutrients in the grains.
And what's more: yum!!!

Oddly enough, I tend to have raw porridge in the warmer months - soaked overnight with nuts and seeds, with a little juice then served with yoghourt/milk and fruit. I've recently considered soaking it overnight to hasten cooking, but the nutritional benefits you describe have actually persuaded me to do it! Porridge is definitely my favourite breakfast and I generally add a tsp of cinnamon to mine before cooking - a lovely way to start the day.

Sounds good but what are anti-nutrients? I slow cook porridge overnight in the bottom of the rayburn,then eat it without anything added except maybe a dash of cold milk.

Ah just read wiki. Is it about the quantity of other grains you might eat? I'm not sure wiki is the best information on this.

Anti-nutrients are toxins that deter predators from eating the plant. Many people don't even notice them probably, but if your digestion is poor for instance, they will affect you.
They are the reason why peas and beans need soaking overnight, and then you have to throw out the soaking water and cook them with fresh. I never used to do that, till I got tummy trouble (for other reasons) a few years ago.
It's when you get old and rickety, that all these things start to matter

I used to eat it fermented in yogurt over night. It was really nice, but I have become lazy due to not feeling my usual self. I should really get back into it though.

I just have porridge and milk, as is, uncooked. I'm very lazy.
