So, who's got a simple, fast, fail safe recipe for cupcakes, including icing, please? Plain and chocolate?

I simply use a basic Victoria spoonge recipe for plain cupcakes. In old money:

4oz butter
4oz sugar (can be reduced a bit if using lots of icing)
4oz SR four
2 eggs

For icing I just made this choc butter icing.

Any good?

Same cake mix, maybe a bit of extra baking powder.

Buttercream - half weight of butter to icing sugar and a splash of milk to let it down.

Substitute an ounce or so of flour or icing sugar for cocoa to make choc versions.

They're buns where I grew up.

When the septics discovered they could sell them back to us under another name.

You clearly have sons. If you had a daughter or two, you'd have in-house info

I've been using this fairy cake recipe for a few weeks now and they turn out lovely every time. I add a little vanilla extract though and I must make the next batch chocolate by substituting some of the flour with cocoa powder. For buttercream icing I just beat together icing sugar and butter until it looks and tastes right, I've never measured quantities.

Buns became fairy cakes when you decorated them with icing and hundreds and thousands. They became butterfly cakes whenyou cut off the top, added butter cream and replaced the cut piece as 2 wings

All too late, I'm afraid. Next time, I'll refer back here.
