My dad keeps giving me large quantities of enormous runner beans. Does anyone have any cunning ideas for using them up as they don't seem to make particularly good soup and we don't seem to eat them up quick enough but I feel bad if they go to waste.

You can pod the beans out and dry them to use later in the year.

if they are stringy then i would compost them or pod as Sean suggests. If they are edible, pickled beans as an idea?

As Vegplot says - if they're really edible then Delia's Spiced Runner Bean Chutney all the way!

Podded beans freeze well for later use or I think they make a fairly good humous. You can deep fry the pods in some way, but it's a while since I've seen the recipe so I can't remember it!

Wrap the biggest one in a carrier bag and hold up a stagecoach
I have dried the beans out of overgrown pods, cook and mash and use as a base for spicy bean burgers.

I'm now considering attempting a mixed fruit and veg chutney with some of the beans, a marrow my dad also gave us, some apples I got from outside the Brownies meeting hall and some more apples that a neighbour gave us and the green tomatoes we have masses of in the garden which are looking unlikely to ripen much now.

Since I haven't made chutney since I was a child and my mother tried it I am not sure how edible it will be but I'm determined now to give it a shot and the Sherbling is very keen on the idea as well.

Well, I spent all morning with the Sherbling in the kitchen chopping fruit and veg for chutney. Used all the beans, all the green tomatoes, all the apples and some other assorted fruit and veg to make up the weight. Not sure how this will turn out but I'm keeping my fingers crossed.

After discarding the inedible pods, keeping the actual beans and making up the weight with random fruit and veg we have 6 jars of very good chutney. I am very impressed with how it turned out
