...something really simple and quick to prepare, was thinking of just doing a whole heap of roast root veg, but wondering about other easy options that might be popped in the oven too, any ideas?

Got plenty of veg and salad in...leek, cauli, carrot, leafy stuff, papichokes in the garden.

There will also be a 2.5 year old eating with us. Or shall I stick to traditional?

Cheaty cauliflower cheese? (You can do this with fennel or other veg as well.)
Steam the veg until tenderish. Shove in dish with cream and parmesan. Bake for a bit.

I've just typed this out and then realised that it's not exactly low fat though. Sorry.

Leafy stuff and ovens don't really go together, except if sauce is involved.

Casseroled red cabbage with carrots, apple, onion and raisins ? More an accompaniment to pork, I think.

How about a large pan of sweated greens done at the last minute ?

If there's a 2.5 year old in the mix I'd keep it simple. Anyway, there's nothing better than a proper roast dinner. (I might even throw in Yorkshires - I know - heresay for some with chicken - but I've yet to meet a kid who won't eat them)

Or better still pigs in blankets. Though I suppose that sausages wrapped in bacon probably don't really qualify as a vegetable.

Actually, I've reconsidered the original post. It's Sunday Lunch. Do it properly. Faffing about like some sort of continental with trays of roasted vegetables indeed. Pshaw.

A meat tray full of root veg (and onions, can't live without onions) with oil and any old cheap wine (homemade will do) and leave to do is gorgeous. Potatoes, are best par boiled first so they go nice and crispy on the outside when roasted. Any old meat will do, leave the fat on it though so it cooks in it's own juices. Wrap the lot in foil or whatever and go down the pub for an hour or two.
