Not quite Mochyn's stollen, but if your in a rush & have a spare bit of marzipan left over after icing the cake......

It makes one stollen quickly & easily

Put the these ingredients into the breadmaker pan in the following order:

125g milk
1 egg
25 g sugar
a scant tsp salt
25g EV olive oil
270 g strong white flour (see note below)
3/4 tsp mixed spice
1/2 tsp cinnamon
90g mixed fruit
25 g chopped nuts
grated rind of 1/2 large clemantine
a level tsp fast acting (breadmaker) yeast

Put on dough program. Note: be ready with a bit more flour during the early stages of the kneed. Depending on the size of the egg and the size of the nuts/ fruit, it may take more flour to hold together.

Once finished, turn out onto floured surface & stretch into large rectangle. Roll out 250g of marzipan (about half a pack) into a long strip and place in the middle of the rectangle. Fold over the rectangle, cover and leave to rize somewhere warm.
Bake at 200c for 20 minutes, turn out onto cooling rack.
Next day, brush with melted butter and dust with lots of icing sugar.

Mochyns recipie works in the breadmaker, in fact I will be making some tomorrow, so I may do one with each recipie.

Made a couple today - big difference in taste this year as I soaked the fruit and cherries in brandy for a few hours before - v nice

Our house now smells of Stollen, fresh bread and mince pies.
I used my basic bread recipe, with a load of dried fruit soaked in tea, and a mixture of spices. I made the marzipan using some almonds I was given, with much less sugar than the recipe said (I don't like things too sweet)
One of the loaves of bread will become "Dead sauce" (as it's known here). The other will be enjoyed fresh.
The mince pies recipe has a sweet pastry with almond & lemon zest and it's wonderful (Katie Stewart's cookbook, from about 1986)

Hi there all - this is my first post so Merry Christmas to all of you.

Just had to post to thank you for the wonderful breadmaker stollen recipe. I had about half a packet of marzipan left from the cake and really didn't want to throw it away. I woke at 7am yesterday wondering if I could make stollen in the breadmaker and found your superb recipe - it's delicious! It was lovely fresh yesterday and it's nice buttered today.

I'm definitely making it again!!

BTW I glazed it with some of the apricot jam glaze I had left over from the cake and sprinkled flaked almonds over it before covering it in icing sugar. Splendid!

Oh I could make normal marzipan for Stollen couldn't I because it gets cooked...!! mmmmm Might just do this we bought FAR too many packets of ground almonds! Not that we don't have an enormous quantity of food to eat already of course - the chocolate cupboard is just plain SILLY Far too many loving old ladies in our church love our children!!

I read this as bread maker stolen and wondered why it merited a post.

got it in the bread maker as we speak - only thing is my bread maker yeast is rather old (normally make by hand only big oven has no door and I like to make a large batch) so it's rising rather slowly... hope it works OK!

Well it was yummy - though I think I should have left it to rise a bit longer. Might even try again!!
