What do I need apart from damsons, chillis and salt? I'm guessing sugar and vinegar? Any ideas?

Some kind of spice to give it a bit of depth, as well as the chili heat ?
Cloves, cinnamon, ginger.. that kind of thing.

Ah yes, I think that's where my green tom & jalapeno sauce fell down, no spices.

I'm tempted to say, "a recipe"

Would onions also be a usual ingredient in a chutney?

And some garlic?

My plum sauce has plums, garlic, chilli, salt, vinegar, sugar, cinnamon. Couldn't tell you quantities, I make it up as I go along. Actually, my sauces are normally jams that won't set reboiled with savoury stuff added

last year we did one with cherry plums, chilli and ginger, sugar, vinegar, and I can't remember what else, but its stonking, really good stuff.

What are you all bottling your chilli sauce in ? Tahir, Sally, et al.
Jars, bottles with screw lids ????

ours is in a gallon demijohn in a cool corner, we keep meaning to bottle it but havent got round to it yet

Just a suggestion. My wife's Damson Chutney is based on this recipe: https://www.deliaonline.com/recipes/cuisine/european/english/spiced-damson-chutney.html . We have found that the sugar content should be reduced from 2lb to 12oz.

You can then add chillies to taste. (Or lack of it )

What's the DJ sealed with ? Rubber bung ? Bung and airlock ?
How long does it keep like that ?

rubber bung, it was made roughly this time last year and is still good, but suspect it needs using up before this tme next year
