Ingredients
200g (7 oz) grated courgette (yellow looks best)
150g (5 oz) caster sugar
1 egg
125ml (4 fl oz) vegetable oil
200g (7 oz) plain flour
1/2 teaspoon salt
1/2 teaspoon bicarbonate of soda
1/4 teaspoon baking powder
Juice and zest of 2 lemons
50g sugar
Preparation method
Prep:15 mins | Cook:45 mins
1. Preheat oven to 160 C / Gas mark 3. Grease a loaf tin.
2. In a bowl, beat together the courgette, sugar, egg and oil.
3. In a separate bowl, sift together the flour, salt, bicarbonate of soda and baking powder.
4. Stir in the lemon zest.
5. Stir the flour mixture into the courgette mixture just until blended.
4. Pour the batter into the prepared tin.
7. Bake 45 minutes in the preheated oven until a knife inserted in the centre comes out clean.
8. Just before the cake is ready make a syrup by gently heating the remaining sugar in the lemon juice until dissolved.
9. Remove from heat and jab all over with a skewer then pour the syrup over the cake whilst still in the tin.
10. Leave to cool fully in the tin. |

Just made another batch of these for the freezer. The giant yellow courgette is defeated!
I wonder what would happen if you used melted butter instead of oil. Might have to have an experiment when I get on to the chocolate ones. The giant green courgettes are still lurking on the patio. |
