I appear to have a bounty of pig's and beef/calves liver and feel like making some pate

So, please throw your best recipes at me!

- can I use the beef liver for pate? never tried it before

Personally only made it from wild goose. I searched for the recipe I seen on Food Network Canada last night using chicken liver, but can't find it on their website.

I've only had 4 legged liver cooked with onions. Mmmmm.

I did rather indulge in liver and bacon and onions, but that's best when the liver is very fresh - not too keen on "plain" liver if it's been frozen or in the fridge a day or two.
The recipe I used to always use is missing from my notebook - there are a few pages that have got lost or illegible and I must find time to write them all up again. So I made a batch with the pig's liver following the Hairy Bikers recipe ( well more or less, no cornichons) and it looks good.

Not found anything for the beef - any ideas?
