One of the best things for me this year was the realisation that I should always take a small rucksack and a couple of plastic boxes out when I go for a walk or a ride, as you never know what you will find! Especially with mushrooms - if you leave them and go back for them later they tend to have been spirited away

This year I am going to try very very hard to make elderflower cordial and/or champagne. The fields at the back of our house have loads in the hedges. Then later elderberry and blackberry wine and pies. Never found mushrooms round here though...do they need special conditions? When we had heavy horses a few years ago at work we were hoping to get some in their field (non improved pasture - lots of lovely wild flowers) but nothing happened in the 7 years we had them there. Don't fancy having to paraglide

I can't believe you're struggling to find mushrooms in Somerset!

In Winter, look for blewits and oyster mushrooms (look at the winter forages article). Keep your eyes open through Spring for St. Georges mushrooms; traditionally you'll see them from Apri, but in these days of funny Springs I've found them in March. Look for them in the shade around the hedges in fields and parks, and watch out for them in scrubby woodlands.
