Made this with Mike one day over xmas and it came out so nice though we would share it with you.It's also an ideal way of using up a lot of leftover xmassy baking bits!
8 oz broken biscuits (I usually clear out the bits in the bottom of our tin )
6 oz butter
4 oz c sugar
4 oz dried mixed fruit
1 tbsp cocoa powder
1 choccie bar for topping

Melt butter, add cocoa and sugar.Now add fruit and bscuits.Mix all together.Line a dish with foil (or you can make tiny ones in cake cases)press down and chill like you would a cheesecake base.Melt the choc and pour over.

How rich is it? I assume that without any raising agent it's quite dense?

Very! We call it refrigerator cake. It's very sweet and bad for you

Yes its not exactly healthy eating I have a terrible sweet tooth though and justify making this as a treat for me and Mike and of course to use up the biscuit crumbs I do it in a GFCF version for him as he doesn't eat gluten or casein so I substitute the butter for his suma marg , use up his special biscuits and use his special choc and carob powder.He doesn't get many sweet treats so its nice for him to have something special..thats my excuse and I'm sticking to it

This is my version:

Chocolate Fridge Cake

4oz butter
3oz golden syrup
1oz cocoa powder
2oz seedless raisins
8oz mixed sweet biscuits, crushed
4oz plain chocolate

Put butter, syrup, cocoa powder and raisins in a pan and heat gently, stirring, until the butter has melted.

Removed from heat and stir in crushed biscuits.

Press into a well-greased 7-8 inch square tin.

Melt chocolate and spread over biscuit mixture.

Leave to cool before eating and don't eat too much at once - it's super-sickly....


Variations:

Replace raisins with chopped prunes, cherries etc.

Use 2oz syrup and 1 oz black treacle.

Soak raisins overnight in brandy or rum.

I always used to make this instead of buying shop buns when I was working and had to do the "it's my birthday/I've been promoted, cakes on my desk" thing. Colleagues fell on it like starving locusts.... Good for fundraising events too - it's quick and easy to make and popular.

I do a simular cake thats melted chocolate, crumbled cake, crushed biscuits and maltesters, melted butter and golden syrup. Its left in the fridge to go hard, is super super yummy but very rich. haven't had it in ages actually......
