I'm trying to make dosas as we had some recently at a food festival and enjoyed them. Plus side is they are gluten free so I can enjoy them as well.

The recipe I have says to use
4oz basmati rice
2 1/2 oz split black lentils (urad dal chilke)
1/4 tsp fenugreek seeds.

I have tried loads of places for the split black lentils but cant find them. Now I could wait until I get to a bigger town and a specialist shop but we want to make them now. Can I substitute something else?

Puy lentils (easy to come by) maybe acceptable.

i use rice flour and gram flour 50/50

letting the batter stand overnight helps a lot with texture

I have those but the recipe I have says to soak the rice and lentils overnight and then blitz in a processor.

Would you send me your recipe please, so want to make these looked again today for these lentils but no good.

Split black lentils (whatever they are) are NOT urad dal. I've never made dosas (not from round our way). Don't be too concerned at using ONLY that pulse, what dhals can you get hold of? Mung or any lentil should do it, as should dpack's suggestion of gram flour
