Hi, has anyone made baked beans before? i made some yesterday and the flavour is great but the beans are hard, do i need to cook them longer? i cooked them for about 5 hours.

We make our own. We soak beans overnight, rinse and cook for about 1 hour or until soft. We then use home-made concentrated tomato sauce, with mace, pepper, stock cube and a touch of brown sugar. Simmer for 30 mins until sauce thickens.

yeah i soaked them overnight, the recipe i used said bring them to the boil then simmer gently for 4-5 hours.

I made them once and decided that it was one of those things that wasn't worth the effort. Yes they were much better but a large part of the point of baked beans is that they are a store cupboard standby.

That's one hard bean.... Do you add salt into the cooking? Salt can make beans go rather tough during cooking. We boil then leave to stand - adding required amount of salt at the end and let them finish absorbing fluid (usually about an hour or so).

I reckon that you've got old stale beans. Sometimes they just won't soften no matter how long you cook them. That or you've accidentally used those china ones for blind baking.
