I have a ridiculous amount of rhubarb.
Apart from the usual suspects: wine, crumble, or glyphosate, have we any ideas what to do with it all?
(obviously there are some ideas in the recipe data base... slightly surprised it came up with rabbit).

tis really nice with fish,especially spratts herring ,macral etc

makes a good ice cream(add a bit of ginger for super ice cream)

ok for sorbet

rhubarb and ginger (use slices rather than powder) jam is pretty good

tis a bit tart as fruit leather but if half and half with something sweet like nanas tis ok

Rhubarb's not a fruit.

HL, if you have several plants have you tried forcing some of it? If not, worth trying next year.

I've never really seen the point...

Little tip for anyone making crumble: don't forget it is in the oven...

Fruit leathers, i make tons of them with mine every year mixed with apples to temper the tartness, means there is fruit all year and it can be torn up and added to crumbles ir just stired into hot custard where it slowly melts and you end up with yummy rhubarb and apple compote flavoured custard.

It was not as much a disaster as it first appeared: it came out of the oven black and smoking, but it turned out that a lot of the black was a nice chewy caramelly thing... I wonder how to make that properly.
