The over-large hazel tree in our garden has nuts on it this year - there weren't any last year so I wasn't expecting anything and it's all a bit exciting.

We are picking them and others are falling off the tree. They are in various stages of ripeness - some properly brown, others still quite pale.

I know we can eat them now - am enjoying them - but do we need to do anything to them in order to keep them for later on? Or will they dry on their own?

I just googled a query about coppicing hazels and was directed to a DS thread of some years ago when I asked questions about just that on here and was given lots of useful advice. Didn't get a chance to follow it at the time but will try again now!

im sure there are many ways of storing hazels but i roast em in the shell. fresh is nice but a bit indigestible,toasted are better food and keep for years another option is shell off ,mashed to paste ,mixed with fruit and meat then dried into pemmican

We just dry them and keep them in an airtight container last years crop is still fresh. As soon as you she'll them they start deteriorating. They'll all colour up nicely during drying

Thanks, both. Does that mean drying them in oven or dehydrator, Tahir, or just letting them dry at room temperature? At the moment they are spread out on a table in the conservatory.

I just dry them in the conservatory. Take the nuts out of the husk, if they've not already fallen out, and then leave for a few weeks in the warm. I discard any that have any black on them as they tend to be empty or mouldy (crack open a few to check).

I then leave in a box/paper bag. The nuts do shrivel a bit, but I tend to cook with them and rehydrate by boiling for a minute or two in a small amount of water.
