just tried this and it is very quick & easy

850g courgette's
2 tbsp olive oil
1 clove garlic crushed
600ml veg / chicken stock
50ml double cream
75g feta cheese
1 tbsp fresh mint finely chopped

heat oil & cook courgette & garlic until soft & lightly browned.
add stock and simmer for 5 minsadd mint & feta stir over low haet until feta has almost melted.
blend until smooth
reheat gently adding cream before serving
garnish with extra feta & ground pepper

a good way to use up that glut of courgette's

Thanks for that. we are getting a bit sick of courgette curry, all we need to buy in are the dairy parts. Soup tomorrow

Yum yum yum!

Added a little extra mint, and a bit heavier on the feta, and that's a damn good soup! Gotta go, there's a bowl needs my attention!

I'll second that, thanks ever so much for posting that recipe. It's really delicious! It's now my favourite use of our courgettes.

i am glad you enjoyed it i am going to try some beetroot soup i have a quick easy recipe for so i will post that if its up to the mark (my oh loves being my test pilot )

Just had it for the second night in a row. I had to cook another batch as the first didn't last very long, and it's just as good the second time round.

We had beetroot the other night, with beer as the stock, and a few other root veg thrown in. Added some vermicelli and it was superb!

Total necro-post (and I've not been on here for ages) but just making this soup, again. Amazing how some recipes just stick.

We've moved up north to Scotland, and bought ourselves a lovely place with about 4 1/2 acres of ground and various outbuildings, just have to get round to making something of all that land now.

I've already made a 3000 square foot chicken enclosure, and have a healthy flock of 25 hens and a cockerel.

Courgette fritters are really good, as is courgette polpette.

for fritters i use a julienne peeler to make strips ,salt them,rinse,dry in a teatowel,add a little cornflour,season and fry

as strips they seem to hold together far better than sliced or grated

i will try this soup once they are in season ,we usually roast em for soup but pan cooked seems efficient .
