When part of a carrot is exposed to the light, it becomes green. If that happens to a potato, you have to cut off the green bit, for it is poisonous. Is the green bit of a carrot (I don't mean the leaves, but part of the root itself) poisonous as well?
It's impossible to find an answer to that on the internet, as 'carrot green' is always understood as the leaves.
Thank you!

Carrot leaves are edible, so I can't see any issue with the greening

Thanks. We haven't got many carrots this year, so throwing chunks away seems rather a waste ....
But the fact that the leaves are edible is, methinks, nothing to do with it! Would you eat spinach root?

They're not particularly tasty so good lumped in with some other greens

Well, beet tops and roots are edible. Perpetual spinach (actually a beet) is sold specifically for the leaf. I can't think of a reason why spinach roots wouldn't be edible unless they have a really high oxalic acid content, but happy for someone to tell me they're poisonous (would they be worth eating?)

All green parts of the potato are poisonous, so not much of a comparison with carrots.

Either way I can't guarantee that green carrots aren't poisonous, although I've eaten plenty.

I know that feeling - I've been eating bolted lettuce and various weeds this year, horrible on their own but together with peas (our own) they made a boring bought cabbage quite edible!

Remember potatoes are part of the nightshade family so parts of them being poisonous is not surprising.
