Pickles, as with cucumbers. Soup, which can be frozen as a concentrate then thinned with stock before serving. Zucchini (courgette) spiralizer noodles, zucchini parmesan (a riff on eggplant parm) Oversize can be split in half, hollowed out, stuffed, then baked

slice lengthways 1 cm thick
brush veg oil sprinkle sea salt
cook em til soft and a little charred. it takes about ten mins in our elderly electric griddle or less on a hot charcoal bbq.
cool
dressing or marinade of choice

or

julienne peeler
dust with seasoned flour ( salt ,cumin and fruity chilli is a pretty good start )
wait for sticky.
form into 4 bite size lumps , deep fry in hot oil a few at a time.
mint yoghurt is one option for a sauce

or

tempura and get em before they get big

Courgette Polpette. Adding chilli and fresh mint to the polpette mix and serve with a tahini lemon yoghurt.
