Hello, I need to make a variety of preserves for a charity stall by July - by which time the soft fruits won't be available for jam. Any suggestions before then? - I've made orange marmalade, lemon and lime marmalade, grapefruit marmalade and spicy chutney. Suggestions please! How do I fill the jam remit?

My favourite jam ever is damson, but I don't know when they become available.

Mango chutney would be a winner?

Beetroot chutney - very quick and tasty (so quick that I have still have 3lb of beetroot in the kitchen just waiting )

Should be plenty of strawberries around in time for jam in July...

If you are desparate for other fruit, go and see the veg wholeseller and see what he has that is just on the turn, which you could buy a bit cheaper.

Blackcurrant, raspberry, gooseberry, all excellent jams, only leaves greengage and damson of the really tip top jam fruits.

How about going down the savoury route? There's always Onion Marmalade, and what about some salsa's or relishes?
