In the other thread I did initially promise the variations from the good food magazine. These are all for 8oz 4egg sponges
Sticky Toffee Banoffee
Add 2 mashed bananas to the mix
Sandwich together with whipped double cream, banoffe toffee and sliced bananas (other wise know as dulche con leche)
Spotty Blueberry and clotted cream
Add 150g of bluberries to sponge mix
Sandwich together with clotted cream and bluberry preserve and cover with more clotted cream and bluberries
Coconut and lime.
Grate a 200g block of creamed coconut.
Add half to cake mix
For icing mix the remaining coconute with the zest and juice of two limes and microwave untill the coconut melts. Add too some butter cream along with some rum (it suggest malibu). Fill and decorate the sponges and coat sides with toasted dessicated coconut
