Just made my mince pies, without mincemeat!!! It took me a while, but i came up with a simple meat-free, largely local alternative that tastes tres similar and agreeable. Ingredients are:

Quince
Blackberries
Medlars
Dried Figs (not local)
Flax, Sesame, Pumpkin, Hemp & Sunflower seeds (flax and sesame not local)
TVP- Soya mince (not local)
Ginger (not local)
Nutmeg (not local)
Cinnamon (not local)
Chilli flakes (not local)

Hardly any TVP or chilli in there, but I really wanted to see what happened. As stated, very nice and bizarrely familiar!

Sounds like a chock full pie. I've got a quince bush, but haven't ever known what to do with them.... I've only heard of jams. Have you tried them in anything else?

I have a small number of small quinces which I acquired over Christmas. They don't look very inspiring. Is quince vodka good then?

I believe so - MJ made some, as have others.
Quinces rarelt look inspiring, but they smell and taste good

Boil quince, strain, add sugar, make syrup. I used mine for sweet rice:

Also with ginger and lemon as a hot drink, and for a syrup pudding thing. Could use for a sorbet too I spose?

Quince are one of the best sources of pectin, aren't they? Anyone use them to set jam?

Not tried, but I find that quince jelly only takes about 10 minutes to reach setting point. Very very fast, and needs careful watching.

Bush quinces are not the same thing as tree quinces. They are different species but can be used in a similar way. Both make good jelly.

This year (sorry last year) I made these things with my tree quinces;
quince vodka -enjoying some as I type, highly recommended
quince jelly
quincemeat -not as interesting as Yarrow's -I just followed a standard recipe but substituted cooked quince for the apple
and lots of stewed quince for the freezer with which I intend to make quince tart.

Tree quinces you say? Looks like we only get bushers around here, any major difference?

I think the bush quince (chaenomeles japonica) is best for jelly making, but it may be worth trying them in recipes for tree quince (cydonia oblonga).

I have used a teeny bit of quince juice to help my Medlar jelly set as I was afraid that as medlars are a bit low in pectin they wouldn't set (and I'd run out of lemons by that point ) It worked really well though. It was a very slow set once it was potted (It took ages to stop being runny. But now it has set absolutely perfectly.
