have you lot been in my cupboards? I've pastry in the freezer from christmas, leeks in the veg box, and roast chicken in a bit, so that'll be chicken, bacon and leek pie tommorow. Possibly with jerusulem artichokes. I've also got a cupboard full of beans (no kale or pork though) and a squash to use up. I've also just been given a recipe for bacon and lentil soup, which was very delicious. Might have that Wednesday.

No eggs though - for the first time in about a hundred years!

Poato, onion and bacon hotpot (adapted slightly from Jocasta Innes' Pauper's Cookbook)

2hrs cooking, serves 4-6

Slice a medium potato per person into thin slices (about 2mm thick)
Slice one large onion (or 2 small ones)
Chop up some bacon or ham - 1 rasher per person is what I usually use, but it depends on how much you can spare.

Make a basic white sauce,add cheese if you want (I do).

In a deep, greased oven-proof dish layer the potatoes,onion and bacon, season with pepper (no salt because of the bacon).
When you have put half the ingredients in pour on half the sauce.
Continue with the layers ending with potato.
Pour on the rest of the sauce.

Bake in the oven at 200c covered for 1 hour. Then take of the lid and bake for a further hour at 180c.

It's easy to increase/decrease quantities for this dish. The long cooking is the secret.
I serve it with carrots and a green veg.

It is delicious

Cold chicken salad with small pieces of bacon, fried until crispy, scattered over. Make the dressing by adding a little sherry vinegar and honey to the fat in the bacon pan and quickly stirring, then pouring over the salad.

Add to braised red cabbage.

Great in pasta. = my favoutire is...
Fry chopped bacon then add a chopped onion (or leek) and garlic, fried in a little olive oil. Then add mushrooms and something green (perpetual spinach here at the moment, but could be any other green leaf or frozen peas are good too). Add a splash of white wine and simmer for a couple of minutes. Stir in a spoon of creme fraiche, toss the lot into pasta and scatter chilli flakes over the top.

Toad in the hole but with bacon wrapped around the sausages and onion gravy.

Boned out chicken legs, stuffed with something nice and wrapped in bacon.

sweet and sour red cabbage.

fry bacon in the bottom of a big saucepan, it would have quite a lot of fat in it. Add a finely sliced red cabbage, a couple of tablespoons of sugar, a big glug of white wine vinegar, a tin of red beans and a half pint of water, bring up to the boil, put the lid on it and simmer for an hour.

its not really cake.

fry an onion and a sensible amount of bacon (both chopped) and a clove of garlic if you like.

meanwhile mix up half pint of milk, two eggs, and a tbspn of tom. puree. Add the bacon and onion when fried.

Mix up with 8 oz flour (add 2tsp baking powder if using plain flour), and a good handful of grated cheese. Season. Add extra flour or liquid if necessary to get a wet dough.

Bake in the oven - a 7" square tin should be big enough - line with a butter paper.

Good with mash, and also nice cold for lunch or perhaps in a picnic.

You will probably only need to season with pepper.
