I've got some glass jars with the wire spring clips on them and I've never used this type for preserving fruit in syrup before. Using the 'water bath' method, at what point do you seal the lids properly with the metal clip? Thanks

I think its after you take them out of the water bath and before they cool if that makes sense

Have you got the rubber rings for them? Won't get a seal otherwise.

Yes, I've got the rubber rings - it's just that with screw top jars I would tighen them just enough to stop anything getting in or out and then tighten them properly at the end. With spring clips the lids either just rest on top of the jar or are securely clipped down. Is it ok to process them with the lids tightly shut?

with the lid tightly shut there will be a lot of pressure built up in the jars and they might crack, I would close the lids and just hook the clip over but not tighten it, have the water in the waterbath about an inch under the top of the jar and if you want a bit more security to keep water out of the jars cover the top with a folded cloth and put a plate on top with a small weight, that wil hold the lids down and let any pressure escape, then when the time is up lift out the jars and clip tight while still hot, this will create a good vacuum seal to help preserve.

I clip mine down completely to begin with, never had a problem.
