.... (if any) for adding to Apple and Rosehip jelly ?

(not chilli or ginger, nor lavender)

Trying to imagine what it tastes like? Is it quite sweet? A flower seemed right so maybe a herb?

cinnamon for a sweet jelly, or cloves

possibly rosemary for something a bit more versatile.

It'll be quite sweet because of the sugar, but rosehips have a kind of sour fruity taste on their own.
I've put them with Worcester Pearmain eating apples, which taste kind of 'pink' / 'bubblegum'-ish

I still have thyme growing; also (I think) oregano or marjoram, possibly mint [but perhap not in this jelly].
Spice-wise I have cinnamon stick, bayleaves, coriander seed, fennel seed.

Starting to incline towards thyme....

I've done this one with thyme, in the end.

Still plenty more apples left, and I have in mind an apple, onion and sage jelly

Anyone ever tried using onions in a jelly ? It's intended for eating with meat - probably Xmas Day turkey or suchlike.

Yes, bergamot would have been good, if I had any. Rosehip has an affnity with citrus, perhaps because of the Vitamin C./ascorbic acid content of both.

The juniper and the vanilla have been paired with blackcurrant.
Apple and juniper sounds good though.

Cardamom. It is really good with fruit -- the sweet/sour quality works very well with it.
