We have a quince tree in the garden that did nothing last year and had gone all spindly so I hacked it back a bit and this year it is fruiting pretty well. What do we do with them though? I have heard of quince jelly but that is about it. Also how do you know when they are ripe, at the moment they are hard as rock and green

Quinces start to go a bit yellow when ripe, but not ever soft.

Get the seeds and hard white bit out, then :

Quince wine is lovely. 3lb fruit/gallon.

I like sweet with savoury, so quinces stewed, perhaps with some apple, goes well with pork.

I reckon quince vodka or gin would be good.

Use in apple crumbles to add fragrance and depth of flavour.

Thanks Gill, more versatile than I realised. I'll see what the boss wants to do with them and have a go at some wine if we have enough. Hard to tell as it's being over run by a rambling rose that has also decided this is the year for growth. Going to be a massive pruning session come autumn I think.

I agree with Gil that adding a bit of quince to apple crumble or anything with stewed apple or apple puree really lifts it.

We did a quince fool for a banquet one year, really went down well. Very perfumey, but that fitted the occasion well.

A dish of ripe quinces scents a room marvelously.

Now, where are you going to get a nice dish from?

Make jelly before you do anything else though. Quince jelly is officially The Best Jelly In The World.

With apple - seconded.

I'd go for jam rather than jelly though. More quincey!

More to these quinces than I realised. Let's hope we get a good crop, looks OK at the moment. Don't know if the wildlife likes them but they seem to be leaving them alone at the moment

That's because the fruit is really hard, even when ripe. Very little pest damage to quinces, funnily enough....
I use my biggest, non-serrated knife to cut them into quarters, and have to push down from above, using both hands [one at each end of the knife].

Well worth it though !

I've got 2 baby quince trees growing in pots - I wonder how long I will have to wait for some fruit?

Quince chutney has to be one of the best ever! We get given sacks of them here.
