I have quite a bit uncooked in the fridge at the moment but what's the best way to keep it? (Did you know there is a goosefat Information Service which I am just going to have a closer look at? )

Maybe melt it and get it into sealed sterilised jars?

We did Toulouse sausages one year, the oens where you cook sausages in goose fat and pot it all up together to fish the sausages out as needed later. Very decadent, but incredibly yummy.

I was considering that. Wonder if there is a different "shelf life" keeping it solid and uncooked or melting it into jars? I froze the fat we drained off the cooked bird.

Rendered fat keeps for ages in the fridge. When the pigs go off to slaughter I render down the flair fat from inside the ribcage, pour it through a sieve into a basin and keep it in the fridge. I've still been using it for roast potatoes several months later with no ill effect.

I bought a tin of goose fat last Christmas and froze what we did not use in a tupperware. When I need some I remove from the freezer for a few mins until able to spoon enough out -then chuck the box back in the freezer .

I think our Christmas goose info said keep in jars in fridge and use within 6 months or freeze.

I'm still using the jars from the fridge and no problems at all.

I'm still using goose fat from last Christmas, I just sieve it and put it back in the jar in the fridge

We bartered this goose with Faithmead. I was hoping we wouldn't like it. I didn't line the oven or find a tray that the bird would completely fit in. Unfortunately everyone found it absolutely delicious. I would cook one again despite the large amounts of grease I am still trying to remove from the oven.
