Sean, I have goosefat left over from my christmas bird, incidentally, confit of goose leg has to be one of the finest tasting meals I've ever cooked.

Pricey, I'll post it if it tastes OK! I sort of took a standard recipe for chicken liver pate and ignored it

I was greatly impressed with a duck confit i had in SW France last year. I have a mallard in the freezer, I wonder if I cold confit some of him.

You're probably better off getting some farmed duck, the legs on a wild mallard will be pretty underdeveloped. Mallard can sometimes taste fishy too, depending upon what they've been eating.

Confit of duck leg may be even better than goose actually, hmmmm

I am a little suspicious of the game I bought recently as there's been plenty of fat on the pheasant and duck. I may try some form of confit with what I have, maybe with a tin of goose fat.

Then I can roast some potatoes in the left over fat or, if I remember, they fried some small cubed potatoes in duck fat. Mmmmm...

Can't find the damn farmer! He's got a whole herd of cows over the road, and I know they live outdoors all year, and eat grass, cos I fall over them at all hours! And they chase me, so I'd quite enjoy their steak.....

Shooting never falls into anybodies lap, you have to work for it, just like anything else.

Joining clubs won't help you at all!

Treaco, knock on a a farmer's door (chances are he won't be in) in tidy clothes waving at him a recommendation from a rifle club and his wife will probably set the dogs on you!

This is something you have to do on your own - person to person!

Showing him a certificate for swimming a width, aint gonna cut much ice.
